Bressan's Carat is a white wine that reflects the traditional blending technique from the past of using together the traditional varieties of Friulano, Malvasia and Ribolla Gialla grapes that have been present in the Friuli region for centuries. Of great disruptiveness, without compromise, it reflects the character of its creator: Fulvio Bressan.
Carat is made from grapes typical of the Collio area, raised without the use of synthetic products or invasive techniques, located on hills of clay composition, with the presence of calcareous schistose marls and layers of quartzose sandstones, without a large percentage of organic matter and nutrients. The grapes in the winery are softly crushed and destemmed, undergo light maceration on the skins through repassings, and, after racking, are pressed. After cold decantation, the must is separated from the solid part and undergoes spontaneous fermentation. The refinement involves the wine sur lies partly in barriques, partly in 20-hectoliter oak casks, through the use of frequent bâtonnage. The blending of the final wine in steel, followed by a short maturation period of about 3 months.
Carat is straw yellow to the eye. On the nose, there are intense fruity scents of apricot, nectarine, and melon with hints of orange peel, acacia honey, walnut and a pleasant almondy appeal. The bouquet opens up over time. On the palate, it is sumptuous, enveloping, fresh, balanced and persistent. A true oenological gem. Ecstatic!
