At that time, the Abbey of Saint Hilaire monks, just as they did in Champagne, began experiments on the refermentation of white wines in the bottle. Even today, La Blanquette represents a true icon of the town of Limoux and has managed to preserve its authentic face over the centuries. Following the oldest traditions, it is, in fact, made from the indigenous white Mauzac grape variety in purity. The Classic Method Blanquette de Limoux Blanc de Blancs is made by a winery that still works with an artisanal spirit and passion. Domaine Astruc cultivates about 50 hectares of vineyards, about 20 of them in the Appellation Limoux territory, the undisputed kingdom of the Mauzac grape. The limestone matrix soils and mild climate allow grapes of excellent quality to ripen. At the end of fermentation, with classic white vinification, the base wines rest a few months before final blending. The second fermentation occurs in the bottle, with an ageing period on the lees of 9 months before dégorgement.
