The vines, located between 280 and 580 meters above sea level, face south-southwest on steep hillsides of up to 70 percent slope. Following manual harvesting and careful selection, the clusters are subjected to gentle pressing, and the resulting must is first allowed to settle naturally and then set off for alcoholic fermentation in temperature-controlled stainless steel tanks. The subsequent maturation period lasts for 7-8 months and takes place on the lees for 80% of the mass in steel and the remainder in large wooden barrels.
