Mezcal comes from \u003cstrong\u003ethe\u003c\/strong\u003e processing \u003cstrong\u003eof agave of the indigenous Cupreata and Alto de Michoacán varieties\u003c\/strong\u003e, which have always been present in these lands. After cutting the plants, the heart of the agave is cooked in traditional brick ovens and then undergoes fermentation. Distillation takes place in typical Michoacán stills, made of wood and copper and fed by direct flame, under the watchful eye of master distiller Guadalupe Perez from the village of Tzitzio.
