The vines of these three varieties are about 50 years old and grow in a terroir composed of porphyritic sands of volcanic origin at an elevation of about 300 meters above sea level. The grapes, after manual harvesting, ferment in steel containers, macerating for up to a maximum of 30 days. The olfactory spectrum is layered, moving through a progression of mineral, fruity, spicy and floral notes.
