The vines of this variety are grown by the Rocca di Frassinello winery team using the spurred cordon system in vineyards located about 90 meters above sea level, characterized by a terroir rich in skeleton and clay. The grapes, after being scrupulously sorted during the harvest phase in the first half of September, vinify in temperature-controlled steel tanks. This is followed by ageing, which takes place first for \u003c\/span\u003e\u003cstrong\u003e\u003cspan data-preserver-spaces=\"true\"\u003e14 months in first-passage barriques\u003c\/span\u003e\u003c\/strong\u003e\u003cspan data-preserver-spaces=\"true\"\u003e, and then, after bottling, for another 12 months directly in the glass.\u003c\/span\u003e\u003c\/p\u003e\r\n\u003cp\u003e\u003cspan data-preserver-spaces=\"true\"\u003eThe Baffo Nero wine signed by Rocca di Frassinello shows on visual examination with a deep ruby red colour, tending to garnet in the rim.
