It all starts in the vineyard, with a careful selection of bunches coming from the vineyards of Tenuta Novare in Arbizzano di Negrar, which rest on soils of a nature marly-limestone with the classic Guyot training system. The grapes, Corvina and Rondinella, are left to dry for a long time, for about 120 days, in a completely natural way in the estate's fruit drying rooms. They are then fermented, in the middle of winter, extremely slowly, ensuring a long maturation that brings it to achieve a balance that guarantees it a \u003cstrong\u003etruly surprising longevity\u003c\/strong\u003e, even spanning several decades!
